It's no accident that our beef is tender and tasty. Our calves come from cows and bulls with
superior carcass genetics. After
grazing on grass and crop residue, they are finished on homegrown and locally
grown hay and corn fortified with additional vitamins D and E, then harvested
at a young age before they are over fat.
The younger the animal, the more tender the meat. Age is one reason grass fed beef and bison
are not as tender and tasty; most are at least 2 years old while most of ours
are finished in 14 months. No matter

Vacuum Packed.
All of our retail cuts are vacuum packed. It's more expensive but much better than shrink wrapping or paper
wrapping. Vacuum packing extends
freezer life, eliminates freezer burn, seals in freshness and allows you to
view both sides of the cut.
USDA Inspected.
This means that there is actually a USDA inspector at the processing
plant inspecting each live animal and its carcass. The processor's facility is inspected weekly and is under strict
regulations regarding their processing.
Black Angus.
This cattle breed has been known for years to have the highest quality,
fine grained meat with marbling (minute flecks of fat in the muscle) and less
seam fat (strips of solid fat as in dairy and some beef breeds). The Black Angus breed has the most
predictable genetics in the beef industry.
Healthful.
When it comes to nutrition, beef has a lot more to offer. It contains a power pack of nutrients to
fuel active bodies and is a delicious way to stay healthy. A 3-ounce serving of beef provides 39% of
the zinc, 50% of the protein and 31% of the selenium most people need in a day.
(You would have to consume nearly 36
ounces of tuna to get the same amount of zinc found in 3 ounces of beef; 7, 3
oz. skinless chicken breasts to get the same B12 found in 3 ounces of beef; or
3 cups of raw spinach to get the iron in 3 ounces of beef). It's an excellent source of niacin,
riboflavin, thiamin and vitamins B6 and B12.
Lean beef is just as effective as skinless chicken when it comes to
lowering blood cholesterol levels.
